The chefs Paul Fontvieille and Franck Salein

Paul Fontvieille's new restaurant, le Carré de l'Ange, occupies one of the most prestigious sites in Ariège: Le Palais des Evêques in Saint Lizier.

The fabulous terrace provides an exceptional view of the Couserans and its high peaks along with a wine bar and an intimate lounge, a convivial space for beginning or ending an evening.

At the Carré de l'Ange, the chefs are inspired by the culinary culture of the Pyrenees, from Catalonia to the Basque Country and both the French and Spanish sides. Their quest is for perfection, creativity and refinement.

In their selection of each product, the chefs and their team place particular importance on quality. Each dish offers the eye and the palate the results of this continual search for perfectly accomplished work.

The chefs Paul Fontvieille and Franck Salein know each producer personally. It is to them that they turn each week for their market purchases.

The produce they buy is essentially Ariegeois, preferably organically grown in order to respect the environment and to offer you high quality ingredients.

The wine list is also Pyreneen, the selections chosen from either side of the mountain range. From Catalonia, wines from Banyuls and Collioure wines, or "hotter" wines more typical of the southern slopes, such as Rioja or Navarre... Often rare pearls, the result of good work by small producers who have carefully tended the vines and the grapes right until you hold the glass in your hand. A wine list based on discovery.

The decor is contemporary, without extravagance but with a multitude of good ideas. For the decoration we have the same demands for quality and conviviality as for the cuisine. As is appropriate for the site, the motto is : respect for the patrimony. Slate is given a place of honour; it is an element of the furniture created by Paul Fontvieille himself. The lighting is in the form of large paper clouds suspended above our heads.

The tableware presents the work of Ariège artisans. Jean Louis Orenga created “la Georgette”, a combined fork and spoon, the knifemaking family Savignac and their creation "l'Ariégeois"; the glassmaking studio of Clermont with a table element created exclusively for the restaurant.

Art is invited naturally into these large spaces, which in the recent past were part of a contemporary art gallery.
Caligrapher Christel LLOP exhibits her canvases. In another genre, Deborah Lanyon exhibits four of her works – panes of light and colours in stone walls.
