	In the tranquil pyreneen spa town of Aulus-les-Bains the Amiel family has been welcoming curists, tourists and local gastronomes to their hotel-restaurant for 3 generations, always with the same pleasure and passion for their profession. The shaded terrace alongside the Garbet river invites you to relax, lulled by the sound of the water as it rushes down the mountain.

The rooms are quiet and furnished in traditional, elegant European style. The old prints and photos on the walls, family mementos on the mantlepieces and the delicious smells wafting from the kitchen are reminiscent of an Old World grandmother's house.

In the kitchen, Jean-François Maurette carefully simmers his specialities, always prepared with fresh ingredients : - Shrimp and scallops with Béarnaise sauce - Duck foie gras in pastry with julienned vegetables - Roast pigeon in port sauce - Filet of beef with morilles (Jean-François himself gathers the morille mushrooms in the woods in springtime)
